Pasta Shells: 3 eggs 1 cup flour A pinch of Salt 1 cup water Beat all ingredients together until smooth and free of lumps. It will resemble thin crape batter when you are done. Filling: 8 - 10 oz of Ricotta Cheese- half a container Grated Parmesan ¼ cup
Shredded Mozzarella ½ cup
Fresh Parsley, finely chopped about 2 tablespoons
Fresh Basil Chopped about 2 Tablespoons
Salt/pepper to taste
1 onion chopped
1 lb ground beef
2-3 cloves of garlic minced
5 cups (a couple handfuls) of fresh spinach chopped
1 jar of your preferred marinara sauce
1 – 1.5 cups mushrooms chopped
Preperation: Cook your beef, add the vegetables (onion, garlic and mushrooms) until desired tenderness. I like to cook them until they are beginning to crisp on the outside a bit. Place in a large bowl, stir in your spinach, ricotta and parmesan cheese.
To cook your shells you want to use a non-stick pan. Place about 3 tablespoons of batter into your frying pan at a low-medium heat. Swirl into a circle with about a 6 inch diameter. When the top of the shell is dry remove from heat and place on wax paper. You only need to cook the one side so do not flip them in the pan.
Spread marinara sauce on the bottom of your cooking pan. About 1.5 cups, then roll your fillings in your shells and place in the pan. If your make several layers in your pan add marinara sauce between the layers. When you are done spread about a ½ to 1 cup of sauce on top and place in oven at 350.
Bake for 30 minutes under foil and then remove foil for 10 minutes. Let cool 10 minutes and eat.

1 lb Lean ground beef
1 ½ Tablespoons Ginger
¼ cup Peanut Satay Sauce
¼ cup Hoisin sauce
¼ cup Stirfry Sauce (Sauce amounts can vary on your desired level of sauciness)
1 – 1 ½ Cups Shredded carrots
1 Onion of your Choosing
1 – 1 ½ Bell peppers
1 ½ - 2 Cups Mushrooms
Several Sliced Pickled Banana peppers
Other vegetables of you might like
Tablespoon Siracha Hot Sauce
Serve with rice
Directions:
Brown the beef in a pan on the stove, while browning add onions and mushrooms. When meat is brown add the rest of the ingredients except the sauces. After the vegetables have simmered with the meat for 5-10 minutes add sauces in desired amounts. Simmer meat, vegetables and sauces for 5-10 minutes then serves with rice.
