Comfort Foods   
Now lets be honest, some times it feels to good to eat foods that might make your belly grow faster than a hot air balloon. We know it and you know it, so here are some of the classic comfort foods we enjoy at the ranch. If these don't make you feel warm and fuzzy inside and out, the you should seee a doctor. 

No need to worry they are far better for you than most things.

 Tortilla Pie   

 

Serves 4-6

You can use either store bought enchilada sauce or you can make your own.

1 can diced tomatoes (20 oz)

1 can jalapenos (4 oz)

½ can chipotle peppers (6 oz) 

1 can green chillies (4 oz)

Place in blender and blend, it is ready simple as that. This makes lots you will not need to use it all.

Ingredients

1 lb Ground Beef

1 onion

1 ½ bell peppers 

1.5 cups chopped mushrooms

1 -2 jalapenos fresh

½ cup chopped cilantro 

4 cups of fried pinto beans – home made 

*you can use canned beans if you want either black or refried

Corn tortillas

Flour Tortillas

2 Cups of Monterey Jack Cheese

2 Teaspoons Cumin

1.5 Teaspoons Chilli Powder

1 Teaspoon Paprika

Black Pepper to taste

½ can of corn

Preperation

Cook your beef and your vegetables add the cumin, paprika and chilli powder. 

You are essentially making a layered pie so start out by greasing your pan with oil. Spread enchilada sauce then place a flour tortilla on the bottom spread a layer enchilada sauce and then of beef. Place corn tortillas on top of the beef. Spread enchilada sauce and then beans sprinkle with cheese. Place a flour Tortillas on top spread with enchilada sauce and beef etc. The top layer sprinkle cheese and cover with bake covered for 45 minutes. Remove foil for 10 more minutes. Let sit for 10 – 15 minutes for cooling to make it easier to cut and serve. 

Serve with either a fresh homemade salsa. Or just salsa and sour cream.

We usually make a 5 layer pie. 3 beef, 2 bean, 3 tortilla, 2 corn.

 Pulled Beef Nachos   

 
Ingredients 

Half to a full bag of Chips - low salt or corn

1 lb of Pulled Beef

3 - 4 Green Onions 

1 Cup Shredded Monterey Jack Cheese

1 Cup Shredded Cheddar Cheese

*Also can be nice to top with avocado and tomato after it has been cooked in the oven

Preperation:

Pull the beef in a crock pot by cooking it for 8 - 10 hrs and shredding it using forks. If it does not pull apart easily it is not ready. To make it you can use a cross rib roast which makes great pulled beef because it has a little more fat in it. We usually pull ours in a mixture of mustard powder, apple cider vinegar, hot sauce, chilli flakes, salt, pepper, bbq sauce, cane sugar, half a onion and paprika. But that is up to you. 

When the beef  is ready the nachos are easy, just make them up and place them in the oven for 5-7 minutes until the cheese has melted.
